This Pork Fried Rice recipe can be adapted to use Chicken instead of Pork if you wish. Also, I often add celery to give a different texture which works very well. It’s a good way of using up any leftover rice, I freeze mine and save it for recipes like this one.

Pork Fried Rice

Ingredients
- 1 tablespoon butter
- 1 175g boneless pork chop, sliced into thin pieces
- 1 garlic clove finely chopped or 1/8 tsp. garlic powder
- 1 inch piece of root ginger peeled and grated or 1/8 tsp. ground ginger
- 30 g chopped carrot
- 20 g chopped broccoli
- 1 spring onion chopped
- 1 egg beaten
- 185 g cold cooked rice
- 40 g frozen peas
- 1 ½ tablespoons soy sauce
DISCLAIMER
I recommend using the Metric measurements (instead of cups & spoons) for more accuracy and better results.
Instructions
- Melt butter in a large non-stick pan over medium heat. Cook the garlic and ginger for a couple of minutes taking care nit ti burn the garlic, then add pork, carrot, broccoli, peas and spring onion in melted butter until pork is cooked through, 7 to 10 minutes. Remove pork mixture to a bowl and return pan to medium heat.
- Scramble egg in the pan until completely set. Return the pork mixture to the pan. Stir rice, peas, soy sauce, garlic powder and ground ginger if using dried into the pork mixture; cook and stir until heated through, 7 to 10 minutes.

Mr.Paul’s Tips
Please remember when cooking a Fried Rice dish you should always use pre-cooked COLD rice, If I ever have leftover rice I freeze it and keep it for fried rice dishes. Also always use a Long Grain Rice, both these tips will prevent your rice clumping together or going sticky, you will get nice separate grains every time.
