Special Fried Rice (also known as Jung Chow, pronounced Yong Chow)

Ingredients

  • 1 teacup of rice cooked as I describe HERE. Fluff up and place in a dish covered in the refrigerator until cold, (this is important to prevent it sticking in the pan/wok)
  • 1 Tablespoon oil not Olive
  • 1 Medium egg beaten
  • 1 Garlic clove crushed or chopped fine
  • ½ Teaspoon grated fresh ginger.
  • 2 Spring onions or ¼ medium onion chopped
  • ½ Teacup of frozen peas
  • 100 g Bacon lightly cooked and cut into small pieces Shops in Spain sell pkts already cut, look for bacon not Jamon
  • 60 g cooked peeled prawns buy these frozen, it’s easier
  • 1 Tablespoon Light Soy Sauce.
  • Good pinch of White Pepper

DISCLAIMER

I recommend using the Metric measurements (instead of cups & spoons) for more accuracy and better results.

Instructions

  • Heat a little of the oil in a preheated wok or frying pan add a further teaspoon of the oil then swirl the egg round the pan to form a thin pancake, cook lightly on both sides but do not overcook. Remove from wok and leave to cool.
  • Heat the remaining oil in the pan. Add the ginger and garlic, stir-fry for 30 seconds, do not allow the garlic to burn, keep it on the move.
  • Add the onions, peas, ham and stir-fry for two minutes.
  • Now stir in the Soy sauce and rice and stir whilst cooking for a further 2 – 3 minutes until everything is hot and, transfer to serving dishes.
  • Roll up the egg pancake and slice like a Swiss roll and use to garnish the rice, serve immediately.
Note the prep time includes pre-cooking the rice the day before.
Paul’s Tip
As this dish contains meat and fish you could serve it with a simple vegetable dish or enjoy it as the Chinese do, just on its own.
