Summer Pudding
This Summer Pudding is a traditional British dessert which was very popular in the late 19th century and as it was made using fresh soft fruits which were only available during the short fruiting season, it’s popularity waned somewhat. However, with the availability of frozen offerings such ‘Fruits of the Forest’ etc. it seems to have made a comeback.
It’s quite an easy dessert to make as it requires no cooking, only simmering the fruit in a little water and sugar for a few minutes. It’s delicious served with either fresh cream or a good dollop of ice-cream.

Ingredients
- 400 g fruit a mixture of soft fruits or just one kind such as raspberries, etc. Fresh or frozen will work perfectly.
- 125 mls water
- 3 tbls sugar white
- 7 slices white bread crusts removed
DISCLAIMER
I recommend using the Metric measurements (instead of cups & spoons) for more accuracy and better results.
Instructions
- Rinse the fruit and place in a saucepan with the water and sugar. Bring to the boil , turn down the heat and simmer gently until the fruit is soft but not breaking up. If necessary sweeten to your taste. See my note below
- Line a 500ml pudding basin with the bread, crusts removed. Try to make sure there are no gaps, if so, fill them with wedges of bread.
- Now pour half of the fruit into the basin and then cover with a slice of bread and then pour in the rest of the fruit mixture.
- Add any remaining bread on top to form a nice fitting lid. Place a plate on top with something heavy on top (I use a bag of sugar or similar) and leave in the fridge overnight.
- Next day, turn out carefully and serve with either fresh thick cream or ice-cream
