Leek & Bacon Pasta Bake
Leek & Bacon Pasta Bake is a variation of several Macaroni Cheese type dishes I have used over the years. It’s quick to make, you can have it on the table in around 30 minutes. What’s more, it only uses two dishes, so less washing up too.

Ingredients
- 125 g macaroni any kind you prefer
- 20 g butter
- 10 g plain flour
- 1 medium leek sliced
- 90 g bacon diced, I prefer smoked but it’s up to you
- 250 ml milk
- Black pepper
- ½ teaspoon mustard
- 50 g cheese mature cheese grated
- 25 g breadcrumbs
DISCLAIMER
I recommend using the Metric measurements (instead of cups & spoons) for more accuracy and better results.
Instructions
- Pre heat your oven to 220C / 200C / gas mark 7 / 425F.
- Cook the macaroni as usual except cook about 2 - 3 minutes less than the recommended time on the packet. Drain reserving a little of the cooking water.
- Heat an oven proof dish NOT GLASS or a cast iron casserole dish over a high heat and add the bacon. Cook for 2 minutes, stirring frequently, until starting to brown.
- Lower the heat and add the butter. When the butter is melted add the leeks and fry with the lid on for about 3 minutes, until the leeks are softened.
- Sprinkle over the plain flour and stir well, then add the milk very slowly, stirring constantly until thickened. When the sauce is roughly the thickness of double cream add in a few twists of black pepper, the mustard and 25g of the cheddar cheese. Stir until the cheese is melted and then take off the heat.
- In a small dry bowl place the breadcrumbs and the remaining 25g of the cheese. Mix together, this will be the topping.
- Tip the macaroni into the cheese sauce, together with about a tablespoon of the cooking water, and stir to combine. Scatter the breadcrumb/cheese topping over the top and place in your preheated oven for 12 - 15 minutes or until golden and bubbling.
