Ingredients

  • 200 g Cooked Meat this can be whatever you have left from yesterday. All meats work well. I even used this recipe at Christmas with some leftover venison, turkey, beef, etc.
  • 1 small Egg
  • 1 tablespoon Breadcrumbs fresh
  • 1 teaspoon Harissa Paste If you don't have Harissa, use a little of your own favourite chilli sauce or paste, I use Tabasco or Salsa Picante
  • ¼ teaspoon Ground Cumin
  • ¼ teaspoon Ground Coriander
  • 1 small Onion
  • 1 pinch Salt

DISCLAIMER

I recommend using the Metric measurements (instead of cups & spoons) for more accuracy and better results.

Instructions

  • Cut the meat into 1cm cubes. Peel and quarter the onion
  • Now blitz the meat the and onion in a food processor until everything is finely chopped
  • Put the mixture into a bowl, add all the remaining ingredients and blend well (I prefer to use my hands for this.)
  • Shape the mixture into burger shapes, the number you will make depends on the size you make them. If I’m serving these as a starter or canape I make them small, Larger if for a main meal. Put them onto a plate and cover with cling film and allow to rest in the fridge or a cool place for an hour.
  • Heat a lightly greased frying pan over a medium heat and seal the patties on each side. Then place in the oven at 160ºC for about 15-20 minutes
  • Serve with a fresh green salad and new potatoes, or roasted Mediterranean vegetables and a small helping of couscous or rice.
