This Chicken Hotpot with Leeks is a really hearty family dish, it’s easy to prepare, a one-pot dish, less washing up. If there are a few in the family to feed, it’s quite economical too.

Ingredients
- 1 tbsp olive oil
- 1 clove garlic peeled and crushed
- 700 g leeks trimmed & thickly sliced
- 200 g cream cheese similar to Philadelphia with herbs. If you can’t get that, then add 1/2 tsp dried mixed herbs
- 125 mls white wine
- 175 mls chicken stock fresh, carton or a made up stock cube
- 2 tsp cornflour level
- 350 g chicken thighs that's about 8 boneless & skinless
- 300 g potatoes unpeeled and sliced thinly
- salt & pepper
DISCLAIMER
I recommend using the Metric measurements (instead of cups & spoons) for more accuracy and better results.
Instructions
- Heat the oil in a flame-proof casserole. Add the garlic and leeks and cook for about 5 minutes until they start to soften.
- Meanwhile, place the cheese, wine, stock and cornflour into a food processor and blend for about 30 seconds or until smooth.
- Arrange the chicken thighs on top of the leeks then pour the cheese mixture over and season to your taste.
- Now layer the sliced potatoes on top of the chicken and place a lightly oiled sheet of greasproof paper on top of the potatoes, then cover with a lid or foil.
- Cook at 180ºC/160ºC Fan/Gas 4 for 11/2 hours or until the potatoes are quite tender. Remove the lid and brown the potatoes under a hot grill before serving.
