Salmon Cakes with Spring Onion

These Salmon Cakes with Spring Onion are full of flavour,  from ginger, spring onions, ginger and more importantly lots of Omega3 as we are often being told is good for our Heart health.

Ingredients

  • 500g g Salmon fillets cooked, flaked, bones and skin removed
  • 90 g Breadcrumbs fresh
  • 50 g Spring Onions finely chopped
  • 1 tsp ground ginger
  • ¼ tsp Black Pepper
  • 2 tsp Vegetable oil

DISCLAIMER

I recommend using the Metric measurements (instead of cups & spoons) for more accuracy and better results.

Instructions

  • Combine all the above ingredients together in a large mixing bowl making sure they're all well mixed, but try not to break up the salmon too much.
  • Form into cakes with wet hands, place in the fridge for 30 minutes to firm up before frying gently in a heave bottom frying pan, try not to fiddle with them whilst cooking, only turn them once a nice crust has formed on the underside.
  • I usually serve these with a flavoured mashed potato (mustard, chives, chilli flakes, etc)
