Sausage and Vegetable Bake
This Sausage and Vegetable Bake is a blend of seasoned sausages, vegetables and potatoes. Roasted together in one pan for ease and simplicity. Plus, it’s so easy to prepare, just 10 minutes then pop it in the oven, that’s all.
You can serve this with anything you like, I particularly like it with either a Moroccan Lemon Chicken or a Spanish Paprika Baked Chicken.

Ingredients
- 450 g pork sausages use your favourite flavour
- 1 red pepper cut into chunks
- 1 yellow pepper cut into chunks
- 750 g potatoes halved or quartered
- 2 small red onions cut into chunks
- 250 g cherry tomatoes
- 1 tablespoon oil
- 1 tsp. mixed herbs
- A good seasoning of salt and black pepper
DISCLAIMER
I recommend using the Metric measurements (instead of cups & spoons) for more accuracy and better results.
Instructions
- STEP 1: Pre-heat the oven to 220°C/200ºC Fan/ Gas Mark 7.
- STEP 2: Place the sausages and vegetables on a large baking tray.
- STEP 3: Drizzle with the oil and sprinkle over the Salt, Pepper and mixed herbs or fresh if you have some, even better.
- STEP 4: Cook in the oven for 40-45 minutes, or until the potatoes are tender.
