Quiche Lorraine
Quiche Lorraine is a classic amongst Quiches, with just 4 basic ingredients the filling has everything you need in a Quiche, it’s moist, creamy and mouth wateringly delicious.
When I make my pastry, I usually make extra and freeze it, that way I can decide to make a recipe like this without having to start making the pastry from scratch, which is an excellent time saver.

Ingredients
- 100 g Pastry Shortcrust. See my Pastry Recipe at the link in my notes below
For the Filling
- 100 g bacon streaky . chopped (plain or smoked it’s up to you.)
- 75 g cheese thinly sliced (I prefer a strong cheddar, but whatever you like)
- 2 large eggs
- 125 g whole milk
- Salt & pepper
DISCLAIMER
I recommend using the Metric measurements (instead of cups & spoons) for more accuracy and better results.
Instructions
- Line an 18cm flan or sandwich tin (loose bottom type are best if you have one) with the pastry.
- Fry the bacon lightly then allow to cool.
- Line your dish with the pastry and with a fork, lightly prick the pastry base all over being very careful not to make any big holes that would allow the filling to leak through.
- Lay the cheese in the bottom of the pastry case and cover with the bacon.
- Beat the eggs and milk together well, season with salt & pepper, being careful with the salt as both the cheese and the bacon are salty. Pour over the cheese and bacon.
- Bake in a moderate oven at 190ºc/Gas 5 until the custard is set but still a little wobbly in the centre, this should take around 40 minutes or so.
- Allow to cool for about 30 minutes before removing the quiche from the tin.
- Can be served at room temperature or cold with whatever side to prefer.
