The Easiest Cheese & Onion Quiche

This is my easiest Quiche ever.

Equipment

  • 1 8 inch baking ing tin

Ingredients

  • 300 g Shortcrust Pastry See my note below
  • 100 g cheese grated , I prefer Cheddar but Gruyère is good too
  • 3 large eggs see my size chart below
  • 1 onion finely chopped
  • 150 g cream double
  • 100 g butter
  • Salt to taste
  • Pepper to taste

DISCLAIMER

I recommend using the Metric measurements (instead of cups & spoons) for more accuracy and better results.

Instructions

  • Before you start preheat your oven to 200°C.
  • Peel the onion and chop it finely.
  • Now melt the butter in a saucepan and fry the onion gently for two to three minutes, until softened. If you add a small sprinkle of salt this will prevent the onion from browning.
  • Break the eggs into a mixing bowl lightly whisk, then add the grated cheese, cream and cooked onion.
  • Mix until fully incorporated and season with salt and pepper, go easy on the salt as the cheese is usually salty.
  • Now line your baking tin with the shortcrust pastry and top with a thick layer of the cheese and onion filling.
  • Bake in the oven for 30 minutes, until golden-brown and crispy on top. Serve hot.
    It may take longer to bake depending on the depth of your filling, give it a little shake to make sure it's set.
PLEASE NOTE: All my oven temperatures are NON FAN if you use a fan oven check with you instructions as you will need to adjust this.
If you don't want to make your own pastry, a good shop bought one is perfectly OK.

Delicious cheese and onion quiche. My children loved this. Served it with potato wedges and a lovely salad seasoned with salt & pepper, lemon and olive oil.
