This Easy French Onion Soup is just the ticket to warm you through on a cold frosty morning, I have to say I enjoy this particular soup anytime of the year, I think it’s one of the finest classics as far as soups go.

Easy French Onion Soup

NOTE: Depending on what stock you're using will affect the seasoning required. Remember ALL stock cubes contain quite a large amount of salt, if use a ready made stock check the label to see if it contains salt or not and adjust your seasoning accordingly.

Ingredients

  • 30 g butter
  • 4 large onions thinly sliced
  • 1 teaspoon ground black pepper
  • 2 cvloves garlic finely chopped
  • 1 ltr beef stock you can use a stock cube or a carton from the supermarket
  • 3 tablespoons Worcestershire sauce
  • salt to taste
  • 4 slices crusty bread toasted
  • 4 slices cheese gruyere style but avoid cheddar etc. as that tend to be a bit greasy when melted.

DISCLAIMER

I recommend using the Metric measurements (instead of cups & spoons) for more accuracy and better results.

Instructions

  • Heat a Dutch oven or a deep heavy base pan over medium heat. Add butter; melt. Add sliced onions and cook gently for about 12 -15 minutes until they are nicely caramelised , then you can add the pepper and garlic ; sauté for a further 2 minutes..
  • Add beef broth, Worcestershire sauce and salt to taste. Bring to a simmer, cover and simmer for at least 10 minutes. Keep warm until ready to serve.
  • Just before serving, preheat your grill. Arrange oven-proof individual bowls or soup mugs with a wide mouth on a baking sheet.
  • Ladle soup into bowls. Top each with a slice of toasted bread and a slice of cheese. Place under the grill until cheese melts and is slightly golden. Serve warm.
Paul's Tips
If you like the soup a darker colour, just cook out the onions a little longer making sure they don't burn, otherwise your soup will have a bitter taste.
If you want to make this ahead of time, follow my directions up to the simmering stage then allow to cool, cover and it will keep in the fridge for a couple of days.
