Leek, Ham and Potato Soup
This Leek, Ham and Potato Soup is very light and super tasty. I find it make an excellent supper sitting front of the fire on a cold, wet, miserable evening. I also enjoy it for a light lunch during the cold winter days.

Ingredients
- 25 g butter
- 2 medium leeks cleaned and sliced thinly
- 300 g potatoes Diced to around 1/2 inch
- 200 g ham hock cooked and cubed
- small sprig parsley
- 1 ltr stock or water
- salt and black pepper to taste
DISCLAIMER
I recommend using the Metric measurements (instead of cups & spoons) for more accuracy and better results.
Instructions
- Melt the butter in a heavy cooking pot and cook the leeks until soft but not brown.
- Next add the potatoes, stock, parsley and salt & pepper
- bring to the boil and turn down to simmer for 45 minutes.
- Nexy add the cubed ham and cook gently for a further 3 - 4 minutes
- Serve with crusty bread bread
