This Cheese & Potato Bake is a quick and tasty midweek meal especially when cooking for the family ad it’s something the children will love. It makes a welcome change from the old ‘Mac n Cheese’, etc.

Ingredients
- 500 g potatoes peeled and cut into chunks
- 30 g butter
- 150 g cheese grated, I use a strong mature cheddar but any strong tasty cheese will do.
- 1 medium onion chopped
- 2 tbsp vegetable oil
- 1 large egg
DISCLAIMER
I recommend using the Metric measurements (instead of cups & spoons) for more accuracy and better results.
Instructions
- Firstly preheat your oven to 200ºC
- Boil your potatoes in salted water until soft, always put potatoes in cold water and bring to the boil.
- In the meantime gently fry your onions in the butter until soft, do not brown them.
- Drain the potatoes and replace in the pan and add your onions, vegetable oil and the egg. Mix together but do not mash to a paste, leave it nice and chunky.
- You can either place the whole mixture in an oven proof dish or in individual ramekins and bake for 20 - 30 minutes until golden and crunchy on top.
- This very similar to a 1960’s School Dinner Classic ‘Cheese & Potato Pie’ but that usually had sliced tomatoes on the top.

Hi Cathy, That sounds delicious, especially the Corned Beef. Thanks also for the 5 Start Rating too.
I love this recipe and make it many times. On the go at the moment for lunch I will add a little cornbeef today as I have some in the fridge.
I also mix the CHEESE with the potatoes and also great extra on the top.
