This is a delightful Apple Sponge also known as Eves Pudding and when served straight from the oven with hot creamy custard no one will be able to resist it, however full they are.

Ingredients

  • 500 g apples Apples/cooking or eating
  • 1 tbsp lemon juice
  • 2 tbsp water
  • 100 g sugar granulated
  • tsp ground Cinnamon or ground Nutmeg

For the sponge topping:

  • 100 g self raising flour sieved
  • 75 g butter softened
  • 75 g sugar caster
  • 1 medium egg lightly beaten

DISCLAIMER

I recommend using the Metric measurements (instead of cups & spoons) for more accuracy and better results.

Instructions

  • Preheat the oven to 180ºC/160ºC Fan/Gas 4
  • Put the lemon juice and water into a pan.
  • Peel, core and quarter the apples, then cut each quarter into 3 slices (add the slices to the pan as you go along, giving a stir to coat,this prevents the apples turning brown).
  • Sprinkle the granulated sugar over the apples and simmer with a lid on a medium heat for about 5 minutes or until the apples are cooked.
  • Once ready take off the heat and transfer to a 15 cm ovenproof dish to cool.
  • To make the sponge topping use an electric whisk to beat together the softened butter and caster sugar until light and fluffy.
  • Next beat in the egg a little at a time.
  • Now gently fold in the flour a tablespoon at a time until you have a smooth paste.
  • Spread the mixture over the apples and bake in the oven for 40 – 45 minutes (or until an inserted skewer comes out clean).
  • Serve with custard or vanilla ice cream.
