Easy Curried Sausages

These Easy Curried Sausages are a perfect meal for anyone working to a tight budget, especially if trying to feed a large family. But another plus for this recipe is it can be adjusted to suit any budget, large or small, simply by changing the sausage you purchase.

I started my working life as a Pork Butcher and the very first thing I was taught to make were sausages, nobody knows better than me the bad reputation sausages have had in the past, but today, most places in the world control the minimum amount of meat sausages are allowed to contain. Even the supermarket Budget sausages are quite tasty these days, so the secret with my Easy Curried Sausage recipes is “Buy the best you can afford” within your budget.

Easy Curried Sausages

Ingredients

  • 500 g sausages any type, quality to suit your budget
  • 1 medium onion chopped
  • 2 medium carrots coarsely chopped
  • 50 g butter or oil whichever you prefer
  • 1 tbls curry powder heat to suit your taste
  • 2 tbls flour plain
  • 100 g peas frozen are fine
  • 500 ml stock fresh, carton or cube will be OK
  • ½ tsp salt
  • ½ tsp white pepper
  • ½ tsp sugar
  • 1 tbls mango chutney or any fruit chutney, you also use apricot jam
  • Parsley to garnish

DISCLAIMER

I recommend using the Metric measurements (instead of cups & spoons) for more accuracy and better results.

Instructions

  • Heat oil or butter in a heavy base pan and gently fry the sausages until you get some colour on them, we are not cooking them completely at this stage.
  • Remove the sausages and place to one side. Now add the onion to the same pan and gently fry until they start to soften, do not brown them, then add the carrots and cook on a gentle heat for a further 3 minutes.
  • Now add the curry powder, salt, pepper and sugar, cook a further 2 minutes then add the stock
  • Bring it to a boil and turn down to a simmer and cook for roughly 15 minutes
  • Next add back the sausages and the peas, cover with a lid and cook gently for 10 minutes
  • Just before serving stir in the mango chutney
  • Serve with boiled or steamed rice, or as an alternative you can serve with creamy mashed potatoes
Paul's Tips: You can of course use whatever vegetables you have to hand, I sometimes like to add some cauliflower, to give a bit of a crunch.
You can make this vegetarian by using veggie sausages.
