This Easy Chicken Stir-Fry is the perfect choice for a mid-week dinner, especially if you’re short on time and everyone’s home that night. If you have the ingredients in the fridge, this is quicker than ordering a take-out, not to mention it’s a fraction of the price.

Ingredients

  • 450 g chicken thighs Boneless skinless

For the marinade

  • tsp Black pepper
  • tsp Salt
  • 1 tbsp Chinese cooking wine
  • 1 tbsp Cooking oil
  • 5 slices Ginger sliced
  • 5 Spring onions cut Into 1/2 inch pieces.
  • 1 tbsp Chinese cooking wine
  • 240 ml Chicken stock
  • 2 small Red peppers slice into rings slice into rings
  • 1 tbsp soy sauce Light
  • 1 tbsp Sugar
  • 2 tbsp Spring onion chopped

DISCLAIMER

I recommend using the Metric measurements (instead of cups & spoons) for more accuracy and better results.

Instructions

  • Flatten the chicken meat with a rolling pin or similar to tenderize and it also prevents the chicken from curling up during cooking. Then cut into bite size pieces and set aside.
  • In a clean bowl combine chicken with Marinade (Chinese cooking wine can be substituted with dry sherry).
  • Mix together thoroughly, allow to marinate for 10-15 minutes.
  • In a wok or large deep frying pan over medium-low heat, add cooking oil, add the ginger slices and fry until golden and fragrant.
  • Then add marinated chicken, fry for about 5-6 minutes until nice golden colour.
  • Continue stir frying, adding spring onion and Chinese cooking wine.
  • Add the chicken stock, red bell pepper rings, light soy sauce, and sugar, stir fry for another 3-5 minutes until the sauce is thickened.
  • Sprinkle chopped spring onion on top at the end. Then serve.
