Ingredients
- 450 g chicken thighs Boneless skinless
For the marinade
- ⅛ tsp Black pepper
- ⅛ tsp Salt
- 1 tbsp Chinese cooking wine
- 1 tbsp Cooking oil
- 5 slices Ginger sliced
- 5 Spring onions cut Into 1/2 inch pieces.
- 1 tbsp Chinese cooking wine
- 240 ml Chicken stock
- 2 small Red peppers slice into rings slice into rings
- 1 tbsp soy sauce Light
- 1 tbsp Sugar
- 2 tbsp Spring onion chopped
DISCLAIMER
I recommend using the Metric measurements (instead of cups & spoons) for more accuracy and better results.
Instructions
- Flatten the chicken meat with a rolling pin or similar to tenderize and it also prevents the chicken from curling up during cooking. Then cut into bite size pieces and set aside.
- In a clean bowl combine chicken with Marinade (Chinese cooking wine can be substituted with dry sherry).
- Mix together thoroughly, allow to marinate for 10-15 minutes.
- In a wok or large deep frying pan over medium-low heat, add cooking oil, add the ginger slices and fry until golden and fragrant.
- Then add marinated chicken, fry for about 5-6 minutes until nice golden colour.
- Continue stir frying, adding spring onion and Chinese cooking wine.
- Add the chicken stock, red bell pepper rings, light soy sauce, and sugar, stir fry for another 3-5 minutes until the sauce is thickened.
- Sprinkle chopped spring onion on top at the end. Then serve.
