This Date and Walnut cake is not seen much these days, but if you do try my recipe I’ll guarantee it’ll be a regular on your baking list.

Date and Walnut Cake

Ingredients
- 200 g dates Chopped
- pinch of Bicarbonate of Soda
- 125 mls Boiling Water
- 75 g Butter or Margarine
- 75 g Sugar
- 1 egg large
- 200 g self-raising flour (If using Plain Flour you need to add 1 rounded teaspoon of Baking Powder NOT baking SODA
- 75 g walnuts Chopped
DISCLAIMER
I recommend using the Metric measurements (instead of cups & spoons) for more accuracy and better results.
Instructions
- Chop the dates, add the bicarbonate of soda and pour on the boiling water and give them a stir and leave to one side while you carry on with the rest of the recipe.
- Cream the butter and sugar until light and fluffy You can use an electric beater.
- Now add the egg and beat well.
- Gently stir in the flour, nuts and lastly the date and water mixture.
- This will make two x 1 pound loaf tin cakes. You can make one big one but making the two is easier to store and keep fresh.
- Grease and line the tins to prevent sticking.
- Bake n a moderate oven at 180ºC/160ºC Fan/Gas mark 4 for about 40 - 45 minutes, check with wooden skewer or toothpick, if it come out clean your cakes are done.

Unfortunately I cannot help with the ridiculous US measuring system, it’s the most inaccurate system there is. I’ve tried many times measuring 3 cups of flour, then weighing them and every time the weights are different. Invest $10 in a metric scale, grams are the same the world over. I’ll guarantee your local baker in the high street isn’t using cups, baking is a science not and need consistent measurements. As a commercial baker, we weigh everything even the water. Sorry I can’t help.

I have been trying to find the best recipe for Old Fashioned English Seed Cake ever since I have been watching and reading Agatha Christie’s Miss Marple Mysteries. I am half English from my Dad’s side of the family, half Lebanese on my Mom’s side. So I can cook the Lebanese dishes, but some of the English side I am not too familiar with. I love to bake too and found it amusing how the character of Miss Marple wanted to know if the dessert was “actually real seed cake”? Since then I have been searching and find people make it different too. Most frustrating as I find the old fashioned ways better-much!
But I am American and we don’t use grams & I need the degrees of the oven too.
I am hoping you can assist me on this endeavor. I also want to make your delicious looking date walnut bread too.
