Creamy Pasta with Asparagus and Bacon
Creamy Pasta with Asparagus and Bacon
This Creamy Pasta with Asparagus and Bacon recipe is a super way to enjoy fresh Asparagus. During the short Asparagus season here in Spain I’ve been trying all kinds of different ways with this delightful vegetable. Although it’s amazing just with butter and a nice grind of black pepper, I’ve discoverer lots of new way to enjoy it. With a quick sauce that you can make as the pasta is cooking, it’s all ready to eat in about 15 minutes.

Ingredients
- 375 g pasta Any kind will do, I’m using Penne
- pinch salt
- 1 tbsp oil Use any cooking oil, Olive oil is good but I personally prefer to use sunflower oil
- 150 g bacon I use smoked but plain will do just fine.
- 375 g asparagus with the woody bottom trimmed off.
- 120 ml crème fraîche or double cream
- 1 large egg
- 60 g Parmesan cheese finely grated plus extra to sprinkle
- freshly ground black pepper
- pinch nutmeg this is optional but does make a big difference to the flavour.
DISCLAIMER
I recommend using the Metric measurements (instead of cups & spoons) for more accuracy and better results.
Instructions
- Trim the woody bottom off the asparagus. Cut off the tips at about 5cm /2” then cut the rest of the stalk into 2.5cm chunks.
- Cut the bacon into thin strips.
- Cook the pasta in plenty of lightly salted boiling water for 10 minutes or so depending what type you’re using.
- While the pasta is cooking, heat the oil in a frying pan and cook the bacon until it starts to colour. Add the asparagus stems and continue to cook for 3- 4 minutes until almost tender, now add the tips and cook for 1-2 minutes.
- Mix the crème fraîche, cheese and egg in a bowl and season with pepper and a pinch of grated nutmeg.
- As soon as the pasta is cooked drain and return to the pan. Add the egg mixture stirring constantly then tip in the asparagus and bacon. Stir to combine.
- Serve sprinkled with a little extra Parmesan.

Thank you for your comment, however, the recipe in question does have the ability to convert the ingredients from metric to US Customary.
for those of us who do not have metric could you not have shown both? The recipe is intriguing but useless to me
