Whole Orange Cake
This is called a Whole Orange Cake because it’s made using the whole orange, peel and all. Perfect for any occasion, but such a treat with a cup of tea or coffee as it so moist and delicious.

Ingredients
- 1 large orange
- 150 g Sugar
- 150 g ground almonds
- ½ tsp Cinnamon ground
- ½ tsp Ginger ground
- 1 tsp baking powder NOT Bi-carb
- 4 eggs
DISCLAIMER
I recommend using the Metric measurements (instead of cups & spoons) for more accuracy and better results.
Instructions
- First you must cook the orange, place it in a deep pan and cover with water, bring to the boil, turn down to a simmer, put lid on and leave for 2 hours, do not touch it.
- Remove from heat and allow to cool in the water, I leave mine overnight.
- Remove the small bit of pith at each end (see video) then break open and remove any seeds.
- Now place all the orange and the sugar into a food processor and give it a whizz.
- Add the ground almonds, cinnamon and baking powder, whizz again.
- Whilst the machine is running, add the eggs one at a time, whizz until smooth.
- Transfer the batter to a 7inch (18 cm) well greased and paper lined bottom spring form tin, this will make sure you get it out easy.
- Bake in the middle of your oven at 170ºC/Gas 3 for about 45 minutes to 1 hour depending on you oven. Halfway through the baking I place either some fil or parchment on top to prevent the top getting too brown. I check mine with a skewer after 45 minutes, when the skewer comes out clean the cake is ready,
- leave on a wire cooling rack for 15 minutes before removing from the tin, allow to cool completely before cutting.
