My Chinese 5-spice duck with noodles makes a pleasant change from the usual chicken. Duck breasts are readily available these days from almost any shop selling frozen food, they’re very good value as they have no bone and every bit is edible.

Chinese 5-spice duck with noodles

My Chinese 5-spice duck with noodles makes a pleasant change from the usual chicken. Duck breasts are readily available these days from almost any shop selling frozen food, they're very good value as they have no bone and every bit is edible.

Ingredients

  • 2 small duck breasts
  • 4 tsp five-spice powder
  • 2 tbsp clear honey
  • 6 tbsp soy sauce Light
  • 4 spring onions finely sliced
  • 150 g egg noodles or 200g fresh egg noodles.
  • squeeze fresh lime juice
  • toasted sesame oil to taste
  • salt and freshly ground black pepper
  • 1 - 2 tbsp sesame seeds to serve

DISCLAIMER

I recommend using the Metric measurements (instead of cups & spoons) for more accuracy and better results.

Instructions

  • Preheat your oven to 180C if using a fan oven 170C or Gas 4.
  • Take a sharp knife and score across the skin side making a diamond pattern. Just cut deep enough to go through the skin and NOT into the meat.
  • Now rub the five-spice all over the skin side and season with salt and pepper.
  • Heat a heavy-based pan (one that can be transferred to the oven later). Place the duck breasts skin-side down and then season the other side with five-spice, salt and pepper. Cook for about 3 - 4 minutes or until most of the fat has run out into the pan and the skin is golden-brown. Turn the duck over and cook for a further 1 minute. Then place the pan in the oven and cook for 4–6 minutes, depending how you like your meat cooked, then allow to rest for about 3 - 4 minutes.
  • Now warm the honey and soy sauce together in a small pan. Bring to the boil for 1 minute. Allow to cool.
  • Bring a pan of salted water to the boil and cook the noodles for 3–4 minutes or according to packet instructions. Drain and toss with half the spring onions, the lime juice and some sesame oil. Cover and set aside.
  • Next slice the duck into strips and place on top of noodles. Drizzle over the sauce and top with the remaining spring onions, sesame oil and sesame seeds.
