Asian Baked Salmon
This Asian Baked Salmon is a very simple dish to make in around 30 minutes but will grace any meal table. You can use it as a main meal or smaller portions as a delightful starter to a special meal.

Ingredients
- 4 fresh salmon filets with skin (approx 200g each)
- 2 tbl. olive oil
- 2 tbl. rice vinegar if you don't have this you ca use white wine vinegar,
- 2 tbl. soy sauce
- 1 tbl. brown sugar
- 2 cloves garlic minced
- 1 pinch ground black pepper
- 1 small onion finely chopped
- 1 tbl. sesame oil
- 2 teacups long-grain white rice
- 4 teacups water
DISCLAIMER
I recommend using the Metric measurements (instead of cups & spoons) for more accuracy and better results.
Instructions
- Make several shallow slashes in the skinless side of the salmon filets.
- Place filets skin-side down in a baking dish.
- In a medium bowl, whisk together the olive oil, rice vinegar, soy sauce, brown sugar, garlic, pepper, onion and sesame oil. Pour the liquid over the salmon, cover and refrigerate for 1 to 2 hours.
- Preheat the oven to 175ºc
- In a medium saucepan put the rice and water, bring to the boil, then cover and cook over medium low heat until rice is tender and water has been
- absorbed, about 20 minutes.
- Remove cover from salmon, and bake in the dish with the marinade for about
- -30 minutes, or until fish can be flaked with a fork. Serve salmon over
- the rice, and pour any remaining sauce in the dish over the salmon.
