Ingredients

  • For the base
  • 190 g digestive biscuit crumbs
  • 37 g sugar white
  • 40 g butter or margarine, melted
  • For the filling
  • 450 g cream cheese
  • 240 g white sugar
  • 24 g cornflour
  • 240 g sour cream
  • 1-1/2 tsp. vanilla extract
  • 5 tblsp Amaretto liqueur
  • ½ tsp. salt
  • 4 eggs

DISCLAIMER

I recommend using the Metric measurements (instead of cups & spoons) for more accuracy and better results.

Instructions

  • Preheat oven to 175ºC
  • Mix together the digestive biscuit crumbs and the white sugar. Add the melted butter or margarine and mix well. Press into the bottom of one 23cm (9 inch) springform tin. Bake at 175ºC for 10 minutes, set aside.
  • Combine cream cheese, sugar, and cornflour, and mix until smooth. Add sour cream, vanilla, amaretto liqueur, and salt. Mix until well blended. On low speed of an electric mixer, add the eggs one at a time, mixing well after each addition. Pour batter carefully over biscuit base.
  • Bake in a preheated 175ºC oven for 60 minutes. Remove from oven. Loosen around the edges with a knife and cool while still in the tin. Refrigerate until it’s completely cold, now remove from the tin. Can be garnished with sliced almonds if you wish.

Happy New Year Mr Paul,
I made your Amaretto Cheesecake for a Christmas dessert and it turned out beautifully. Everyone in the family enjoyed it with a splash of cream.
The only comment I would make is my wife and I thought the topping was a tad too sweet. We like you are diabetic so next time I will halve the sugar on the topping and maybe use more butter instead of all the sugar for the base.
It was quick and easy to make, served with fresh strawberries on the top really lovely. PS I also put extra Amaretto in to give it more omph!
