Apple Crumble with Cider
Apple Crumble is the perfect pudding for this time of year, when the shops are full of delicious apples, both eating and cooking varieties. For me, this is one of the winners as far as autumn desserts are concerned.

Ingredients
- 50 mL Cider Whichever you prefer
- 100 g Sugar caster
- Zest of 1 Lemon
- Juice of Half a Lemon
- ¼ teaspoon ground Clove or 5 whole cloves, remember to remove them before adding the topping.
For the topping:
- 100 g Sugar
- 100 g Butter
- 200 g Plain Flour
- ½ teaspoon Baking Powder NOT baking soda
- 1 Tablespoon cold water. PLEASE NOTE: In the video I said 2 tablespoons of water by mistake)
DISCLAIMER
I recommend using the Metric measurements (instead of cups & spoons) for more accuracy and better results.
Instructions
- Preheat your oven to 200C/180C fan.
- Peel and core the apples, then roughly chop them into large pieces and place them in a large saucepan.
- Pour the sugar over the apples and add the cider and cloves.
- Bring to a simmer over a medium heat, covered, stirring occasionally, and leave for about five minutes.
- Meanwhile, make the crumble: put the flour, sugar and butter into a mixing bowl and use only the tips of your fingers to rub the ingredients together until all of the contents of the bowl resembles rough breadcrumbs, not a smooth sand like consistency.
- Now add the tablespoon of cold water and mix gently to form smallish clumps, these will give you a much crunchier topping.
- If quite a bit of liquid has come out of the apple, mix 1 teaspoon of cornflour with 1 tablespoon of cold water abd add to the apples, cook until thickened. and put them in an oven-proof dish, such as the casserole dish as shown in the video.
- Cover the apples with the crumble topping and sprinkle a little caster sugar over the top if you want.
- Put the crumble in the oven for 25 - 30 minutes, or until golden brown.

I have never seen a recipe that suggests adding the cold water to the crumble topping . It makes the top so crunchy .I will be doing that from now on .

Thank you for the tip about adding a tablespoon of water to the crumble mix in order to make it clumpy. Without the water, mine did tend to come out like fine breadcrumbs.
