When is a Pie not a Pie?

Thanks for joining me today, as this is a brand new site, I thought this was a good `place to start.

British Pies are my passion and I have some strong ideas about them too.

Now when it come to Pies of all varieties, I have a few pet hates about what some people pass off as pies.

1) A Pie should always consist of a pastry bottom and a top. If it has no top, it’s most definitely NOT a pie, it’s a TART or FLAN.

2) If it’s one of those abominations served up in your local Gastro-Pub, i.e. a spoonful of stewed steak with a pre-frozen slice of pastry laid on top, the that is certainly NOT a pie, it doesn’t even deserve a name, it should go straight into the bin.

3) NO savoury pie should have a PUFF PASTRY top, it must always be Short crust pastry with only one exception, the Pork Pie, then it just has to be HOT WATER PASTRY..

Finally, as for the pastry, it really doesn’t matter if you buy it ready made or make it yourself, Today, shop bought pastry is very good, so if you’re short on time or just one of those people who don’t really like cooking but likes to do your best for the family with some home-made food, go out and buy your pastry, I have no problem with that.

WoW U R certainly prolific then Mr. Paul ! A huge loada recipe vids, books, sales items. Mmm, mmm, mmm. Must B as busy as B4 retirement.

Well. I’m 70 y/o and ‘semi retired’. Just means busier than when employed and lots of wrk w/o pay. aahahahaa (Got me housing & Soc Sec retirement check). Cooking several times for employ when the economy soured (loved the team) & now itsa hobby. Will tuck into some of these at a later date. I’m grabbin all the different pastry recipes as American desert pie, hand pies (of the world – empanadas, chapati, pierogi, etc), and these small tin ‘savory’ pies are all my fav !
