Welsh Griddle Cakes

Ingredients

  • 200 g self-raising flour If you only have plain flour See my tips below
  • ½ tsp salt
  • 100 g butter
  • 50 g sugar
  • 50 g currants
  • 1 egg
  • 2 tbsp whole milk

DISCLAIMER

I recommend using the Metric measurements (instead of cups & spoons) for more accuracy and better results.

Instructions

  • In a mixing bowl blend the flour and salt together then rub in the butter with your fingertips until a bread crumb consistency.
  • Now stir in the sugar and currants. Add the egg and enough milk to for a fairly stiff dough.
  • Roll out on a floured surface to about 5mm in thickness. Cut into rounds, re-roll the trimmings until att the dough is used up.
  • Cook on a reasonably hot griddle plate or heavy bottom frying pan for about 3 minutes each side.
  • You may have to adjust the heat or the cooking time,just make sure they don’t burn.
  • I like to sprinkle caster sugar over the cakes while they're still warm.
  • Serve worm or cold with some tasty salted butter.
