Ingredients
- 200 g self-raising flour If you only have plain flour See my tips below
- ½ tsp salt
- 100 g butter
- 50 g sugar
- 50 g currants
- 1 egg
- 2 tbsp whole milk
DISCLAIMER
I recommend using the Metric measurements (instead of cups & spoons) for more accuracy and better results.
Instructions
- In a mixing bowl blend the flour and salt together then rub in the butter with your fingertips until a bread crumb consistency.
- Now stir in the sugar and currants. Add the egg and enough milk to for a fairly stiff dough.
- Roll out on a floured surface to about 5mm in thickness. Cut into rounds, re-roll the trimmings until att the dough is used up.
- Cook on a reasonably hot griddle plate or heavy bottom frying pan for about 3 minutes each side.
- You may have to adjust the heat or the cooking time,just make sure they don’t burn.
- I like to sprinkle caster sugar over the cakes while they're still warm.
- Serve worm or cold with some tasty salted butter.
