Sticky Fudge & Walnut Pudding

For me I think this past year has the worst I can remember here in Spain, in fact, for the first time in almost 20 years I started looking through my old UK comfort food recipes. The one I’m sharing with you today has been a favourite of mine for years but I hadn’t made it since leaving the UK. So, yesterday as it was a cold, wet and somewhat windy day I set to and made this for my after dinner pudding, and, I have to say it was absolutely delicious. Sticky Fudge & Walnut Pudding

Ingredients

  • 150 g Butter plus extra for greasing your basin
  • 175 g Soft Light Brown Sugar
  • 300 mls Double Cream
  • 125 g Chopped Dates
  • ½ Tsp Bicarbonate of Soda NOT Baking Powder
  • 1 Egg beaten
  • 125 g White Self-raising flour this is now readily available in Spanish Supermarkets
  • 50 g Chopped Walnuts

DISCLAIMER

I recommend using the Metric measurements (instead of cups & spoons) for more accuracy and better results.

Instructions

  • Butter a deep ovenproof dish, approx 1ltr or slightly larger
  • In a saucepan gently warm 75g of the butter, 125g Soft light brown sugar and the double cream. Bring this mixture to a vigorous boil at let it bubble for about 3 mins. Pour a little of this fudge sauce into the greased dish just to cover the base.
  • Put the dates in a small bowl and pour over 125mls of boiling water, add the bicarbonate of soda and leave to stand for 10 minutes.
  • In another bowl beat the remaining sugar with 50g of butter until light anbd fluffy. Beat in the egg with the dates mixture - it will look slightly curdled, don't worry. Now dtir in the flour and nuts and pour into your prepared dish.
  • Bake at 180°c (350°f) Gas mark 4 for around 50 minutes. Run a palette knife round the edge of the dish and turn out. Warm the remaining fudge sauce and pour over the pudding.
