Spanish Tortilla (Spanish omelette)
The Spanish omelette or Spanish tortilla is a traditional dish enjoyed throughout Spain. It’s an essential part of the Spanish cuisine. It is an omelette made with eggs and potatoes, sometimes including onion. It is often served at room temperature as a tapa in almost every bar. It can be enjoyed as a snack alone or served with bread and sometimes as a main meal.

Ingredients
- 4 medium eggs
- 5 tbls olive oil
- 1 large potato peeled and cut into cubes
- 2 tbls onion finely chopped
- salt & black pepper
- knob of butter to glaze
DISCLAIMER
I recommend using the Metric measurements (instead of cups & spoons) for more accuracy and better results.
Instructions
- Break the eggs into a bowl, add 1 tbls water and whisk together
- Heat 3 tbls of the oil in a small frying pan. Add the diced potato and onion and fry gently for about 10 minutes, until the potatoes are soft, stirring them from time to time. Remove them from the pan with a slotted spoon and add to the eggs, season with salt & pepper.
- Heat a 15 cm heavy base frying pan over moderate heat, then add 2 tbls olive oil. Cook the totilla mixture, lifting the sides to allow the liquid egg to run underneath. shaking the pan to prevent sticking. Continue until a golden crust has formed underneath.
- Turn the totilla onto a plate and scrape off any bit adhering to pan. Now heat 1 tsp oil in the pan ad slide the totilla back into the pan to brown the other side. The surface of the totilla should be golden and slightly crisp, but the inside should be almost runny.
- Slip the tortillo onto a serving plate and glaze the top with the butter. Serve hot or cold cut into wedges. When cold it can be eaten ion a sandwich.
