My Marble Cake is a real talking point when you have company, everyone wants to know how you did it. Well it’s up to you if you wish to tell them, but I thinks it should be a well kept secret.

Equipment
- 18 cm Round Cake Tin
Ingredients
- 150 g Butter or margarine
- 150 g Sugar Caster
- 150 g Self-raising Flour
- 30 g Cocoa Powder approx. 6 teaspoons
- 3 medium eggs
- 30 g Instant Coffee powder dissolved in a little cold water
DISCLAIMER
I recommend using the Metric measurements (instead of cups & spoons) for more accuracy and better results.
Instructions
- In a mixing bowl cream the sugar and butter/margarine until light and fluffy
- Now beat in the eggs one at a time until fully incorporated.
- Next FOLD in the flour, DO NOT over mix
- Next divide the mixture into three equal portions. To one add the cocoa `powder and to another add the coffee mixture.
- Grease and line your cake tin with baking parchment and place fairly large spoonful's of the three mixtures randomly into the prepared baking tin and smooth the top with the back of a tablespoon.
- Now take a skewer and push into the cake mixture and swirl a circle from the outside to the centre of the tin, do this two or three times.
- Bake at 190ºc Gas 5 for about 45 - 60 minutes or until a skewer inserted into the cake come our clean. IMPOTANT NOTE: DO Not open the oven door until the cake has been in the oven 40 minutes.
- Remove from tin and cool on a wire rack. You can decorate the top of the cake with some lemon water icing if you wish or just enjoy it as it is.
