Sausage & Pasta in a Creamy Sauce

Ingredients
- 400 g pasta of your choice
- 2 cloves garlic finely chopped, I personally use a garlic press
- 500 g pork sausage meat of your choice
- 1 tbsp olive oil
- 60 ml dry white wine
- 250 g chopped tomatoes canned, or whizz a can of peeled tomatoes in a blender.
- 180 g double cream see my tips below
- 180 g whole milk see my tips below
- 33 g grated parmesan
- 1 tsp Italian herbs. Either a shop bought mix or a mixture of basil oregano, parsley, thyme, basil and rosemary (about equal amounts).
- ¼ tsp chilli flakes
- ¼ tsp each salt and pepper
- A couple of good hands full of baby spinach
- Parmesan for serving, optional
DISCLAIMER
I recommend using the Metric measurements (instead of cups & spoons) for more accuracy and better results.
Instructions
- Cook your pasta as per the label, but about a minute less than suggested. Drain, but keep back about a teacup full of the cooking water for later.
- You’ll need quite a large pan/skillet for this dish. Heat oil in the pan over high heat and cook the garlic for only about 15 - 20 seconds being careful not to burn it. This is just to flavour the oil.
- Now break up the sausage meat and add to the pan just until you start getting a little clour on the sausage, about 4 - 5 minutes.
- Add the dry wine and make sure you get all the brown bit off the pan bottom, that’s all flavour.
- Add remaining ingredients except the spinach. Mix well and, bring to simmer then turn the heat down to a gentle simmer for just about 2 - 3 minutes to make sure all the ingredients are well distributed.
- Now you can add the pasta and the spinach, mix well to make sure the pasta is nicely coated with the sauce, if you feel the sauce is a little too thick, then add a little of the pasta water you saved earlier and adjust to your preference.
- Serve at once dressed with grated parmesan.
