Ingredients
- 2 tablespoons extra virgin olive oil
- 500 g chicken thigh boned
- 1 onion finely chopped
- 125 g bacon rashers trimmed, chopped
- 3 cloves garlic crushed
- 300 ml cream single/pouring
- 1 chicken stock cube, crumbled
- 30 g Parmesan cheese Grated
- 85 g peas Frozen are OK
- 60 g baby spinach Optional I personally use finely shredded green cabbage
- 1 teaspoon finely grated lemon rind
- 300 mls Water
- Crusty bread to serve or with your favourite pasta
DISCLAIMER
I recommend using the Metric measurements (instead of cups & spoons) for more accuracy and better results.
Instructions
- Heat half the oil in a large frying pan over medium-high heat. Add chicken. Cook, turning, for 5 minutes or until golden and browned. Transfer to a plate.
- Add remaining oil to pan. Add onion and bacon. Cook, stirring, for 5 minutes or until onion softens and bacon is golden. Add garlic. Cook, stirring, for 30 seconds or until fragrant. Transfer 1/4 of the bacon mixture to a bowl. Cover to keep warm
- Return chicken to pan with cream, stock, parmesan and the water. Bring to the boil. Reduce heat to medium. Simmer, uncovered, stirring occasionally, for 10 minutes or until chicken is cooked through and sauce has thickened.
- Stir in peas and spinach. Cook for 1 to 2 minutes or until heated through. Remove pan from heat. Stir in lemon rind. Season with salt and pepper. Sprinkle with reserved cooked bacon. Serve with crusty bread.or as I did with your favourite pasta

Thank you for your feedback, I have checked the recipe and unfortunately the water amount was accidentally omitted from the ingredient list, consequently when you scaled the recipe down to two portions the 300ml did not recalculate. I apologise for this error, I will change that first thing in the morning.
We enjoyed this recipe for 2 people, but we found the 300ml of water was a bit too much for 150ml cream. I cooked it a bit longer to reduce the sauce.
