Mushroom Bruschetta

Ingredients

  • 300 g Mushrooms Whatever kind you prefer, I use brown caps myself
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • ½ tsp sugar
  • ½ tsp thyme leaves if using dried 1/4 tsp
  • salt & pepper
  • ½ clove of garlic
  • 4 slices of nice crusty bread
  • extra olive oil for drizzling Optional

DISCLAIMER

I recommend using the Metric measurements (instead of cups & spoons) for more accuracy and better results.

Instructions

  • Heat oil in a large frying pan on high heat
  • Cut your mushrooms into slices about 1/4” thick and sauté for just a minute or two.
  • Add your balsamic vinegar and sugar then cook for around 30 seconds or until a nice colour forms.
  • Now add you thyme salt and pepper, stir and dive the contents of your frying pan between the 4 slices of toasted crusty bread.
  • Drizzle with a little xtra olive oil if you wish.
Paul's Tips
It's always best to just wipe your mushrooms if possble because if you wash them they will absorb a lot of water and then in the pan they will tend to boil and not fry.
