Equipment

  • 8 Dariole moulds

Ingredients

For the Sponge

  • 100 g butter unsalted , softened
  • 100 g sugar caster
  • 100 g self-raising flour
  • 2 large eggs
  • 1 tsp baking powder
  • 1 tsp vanilla extract

For the Coating

  • 100 g Red Jam
  • 75 g desiccated coconut
  • 4 glacé cherries halved

DISCLAIMER

I recommend using the Metric measurements (instead of cups & spoons) for more accuracy and better results.

Instructions

  • Cream together the butter and sugar until fluffy and almost white. Add in the flour, eggs, baking powder and vanilla bean paste until well combined. DO NOT over beat
  • Grease the madeleine mould with a little butter or a non stick spray and divide the mixture between 8 moulds.
  • Bake for 8-10 minutes at 200°C/180°C fan/400°F/Gas 6 or until risen and golden.
  • Allow to cool in the mould for a few miniute minutes and then very carefully remove and transfer to a cooling rack.
  • Once slightly cooled, trim the cakes so they have a flat top. Turn upside down so that the madeleine is standing on the widest end.
  • Heat the jam with 1 tbsp of water on low until spreadable.
  • Spoon or brush the jam all over the top and sides of the sponges.
  • Toss in the desiccated coconut.
  • Top each with half a glacé cherry to finish.
