Mr Paul’s English Madeleines
These English Madeleines are the perfect cake for a party table anytime of the year, but at Christmas time they really come into their own with their bright red colour amongst the the other festive foods. 20 minutes and they are ready to serve.

These are English Madeleines, not to be confused with the Original French fancy.

- 8 Dariole moulds
Ingredients
For the Sponge
- 100 g butter unsalted , softened
- 100 g sugar caster
- 100 g self-raising flour
- 2 large eggs
- 1 tsp baking powder
- 1 tsp vanilla extract
For the Coating
- 100 g Red Jam
- 75 g desiccated coconut
- 4 glacé cherries halved
DISCLAIMER
I recommend using the Metric measurements (instead of cups & spoons) for more accuracy and better results.
Instructions
- Cream together the butter and sugar until fluffy and almost white. Add in the flour, eggs, baking powder and vanilla bean paste until well combined. DO NOT over beat
- Grease the madeleine mould with a little butter or a non stick spray and divide the mixture between 8 moulds.
- Bake for 8-10 minutes at 200°C/180°C fan/400°F/Gas 6 or until risen and golden.
- Allow to cool in the mould for a few miniute minutes and then very carefully remove and transfer to a cooling rack.
- Once slightly cooled, trim the cakes so they have a flat top. Turn upside down so that the madeleine is standing on the widest end.
- Heat the jam with 1 tbsp of water on low until spreadable.
- Spoon or brush the jam all over the top and sides of the sponges.
- Toss in the desiccated coconut.
- Top each with half a glacé cherry to finish.
