Mediterranean Savoury Muffins
These Mediterranean Savoury Muffins are delicious eaten with soup, a salad or an anytime snack. They’re lovely and moist, savoury and very moreish indeed. I prefer them still warm, but even cold they’re still very cheesy and mouth-wateringly delicious.

Ingredients
- 275 g self-raising flour
- 1 tsp baking powder
- ½ tsp salt
- 50 g butter melted
- 1 large free-range egg beaten
- 250 ml whole milk
- 75 g Gruyère cheese grated
- bunch of basil leaves only, chopped
- 75 g pitted black olives chopped
- 2 tbsp sun-dried tomato paste
DISCLAIMER
I recommend using the Metric measurements (instead of cups & spoons) for more accuracy and better results.
Instructions
- Preheat the oven to 200C/180C Fan/Gas 6 and line a 12-hole muffin tin with muffin cases.
- Measure the flour, baking powder and salt into a large bowl. Mix the butter, egg and milk together in a jug.
- Add the cheese, basil and olives to the bowl of dry ingredients and mix well. Pour in the wet ingredients and gently stir everything together using a fork. Loosely swirl in the sun-dried tomato paste to give a rippled effect through the batter.
- Divide the mixture between the cases and bake in the oven for 18–20 minutes, or until well risen and lightly golden brown.
- Remove from the oven and allow to cool slightly. Serve warm or cold.
Mr Paul's Hints & Tips
If you gently swirl in the sun-dried tomato paste, without stirring it in completely, this will give a lovely surprise of tomato when you eat the muffin, as well as a nice rippled effect.
