Lemon Meringue Pie
A Traditional English Lemon Meringue Pie is the perfect Summer dessert. It has a lovely thin crispy pastry base, the filling is tangy with the zest on juice of lemon and it’s topped with a delicious melt-in-the-mouth meringue, what could be better?’

Ingredients
- 130 g Short Crust Pastry. . See my recipes for my different pastries at link below
For the filling
- 2 medium Egg Yolks
- 100 g Sugar White
- Zest & Juice of 1 Large Lemon
- 125 g Boiling water
- 25 g Cornflour /Cornstarch, (make a slurry with cold water it should be the consistency of cream
For the Meringue
- 100 g White Sugar
- 2 medium Egg whites
- ¼ tsp. Cream of Tartar or a few drops of lemon juice
DISCLAIMER
I recommend using the Metric measurements (instead of cups & spoons) for more accuracy and better results.
Instructions
- Method
- Line an 18cm flan tin/pie plate with your pastry and blind bake as per the video.
- Beat the egg yolks with 100g of the sugar, add the lemon juice, zest, juice and boiling water.
- Bring to the boil and add the cornflour slurry, stirring all the time until it thickens.
- Pour into the pastry case.
- Whisk the egg white and cream of tartar on slow speed until well frothy (not stiff yet) Add the sugar in 3 - 4 lots whisking well in between. Once all the sugar is in you can whisk on full speed for about 4 - 5 minutes until glossy and stiff.
- Spread over the lemon filling making sure it comes right to the pastry edge.
- Bake at 150ºC for about 15 - 20 minutes until the surface is pale golden. Now turn your oven off, open the door slightly and leave for a further 20 minutes before removing.
