Last Minute Christmas Pudding – Microwave
This Last Minute Christmas Pudding is a must if you’re short on time or simply forgot to make your Christmas Pudding. You can always save the day using your microwave oven. Yes, it’s possible to produce a very acceptable Christmas Pudding in less than half an hour. Now believe me, I’ve made this several times with good results. Lets face it, after eating a delicious Traditional, all the trimmings Christmas dinner, no one is going to quiz you about the pudding, so it can be your little secret, Shhhhhhh!

Ingredients
- 100 g butter softened, plus extra to grease
- 100 g cranberry sauce ready-made
- 2 tbsp golden syrup
- 100 g sugar dark brown soft
- 2 eggs medium, beaten
- 100 g plain flour
- 1 tbsp mixed spice heaped
- 300 g dried fruit mixed
- 1 apple medium size, peeled and grated
DISCLAIMER
I recommend using the Metric measurements (instead of cups & spoons) for more accuracy and better results.
Instructions
- Grease a 1.2 litre (2¼ pint) pudding basin. In a small bowl, stir together cranberry sauce and golden syrup. Spoon two-thirds of the mixture into the base of the prepared basin, reserving the remaining mixture.
- In a separate bowl, beat together the butter, sugar, eggs, flour, mixed spice, dried fruit and grated apple until well combined. Spoon the mixture into the prepared basin and press a large piece of parchment paper on to the pudding to cover the surface.
- Microwave on medium power for 9min until firm to the touch. Leave to stand for 10min before turning out on to a plate. Spoon over reserved cranberry mixture and serve immediately with whatever sauce you prefer (Cream, Custard, Brandy Butter, etc.).

Regarding substitute for cranberry sauce, possible suggestion, could also try Apricot or Seville marmalade/jam could work well. Left over mincemeat maybe? only to consider it will change taste/ texture slightly as cranberry has a slight sharp taste so would depend what you would like to taste.

Unfortunately I have never tried substituting the Cranberry Sauce, plus where I live in Spain I’ve never seen or heard of Blueberry or Strawberry sauce so I’m no able to test them. If I had to, I would go for something like Redcurrant Jelly or Blackcurrant jam. Sorry I can’t be of more help.
