Irish Soda Bread
The recipe below is for a plain soda bread loaf which is delicious with just butter, even better with nice bowl of Butternut Squash soup. Or as in the photo, you can of course add things to flavour the bread such as dried fruit, nuts, herbs, etc.
The softer your dough is the more moist the crumb with be. Once you´ve made this recipe a couple of times you will get to know how the dough should feel. I hope you enjoy this and I wish all my Irish friends where ever in the world you are “A Very Happy St Patrick´s Day on Monday”
Irish Soda Bread

Ingredients
- 300 g Flour Plain
- 250 g Flour Whole-wheat
- 1 tsp Baking Soda NOT baking powder
- 11/2 tsps salt
- 200 mls Buttermilk
DISCLAIMER
I recommend using the Metric measurements (instead of cups & spoons) for more accuracy and better results.
Instructions
- Mix dry ingredients together in a mixing bowl.Make a well in the centre and our in the buttermilk.You may not need all the buttermilk depending on the moisture content of the flour.Work the mixture gently together, do not knead it.Tip onto the worktop and push the dough together into a ball.Place the dough onto a floured baking sheet and with a very sharp knife cut a deep cross in the top.Get it into the oven right away and bake at 200ºc for about 30 minutes or until it sound hollow when you knock the bottom on the loaf.

PAUL´S TIPS To make your own Buttermilk use 1 teacup of fullfat milk and 1 tablespoon of either Lemon Juice or White Wine Vinegar. Mix and leave a few minutes to curdle then measure out and use, rememebr it´s best if it´s Ice Cold.

I made your Irish Soda Bread this evening, and by coincidence I had made Butternut Squash soup on Wednesday! I too needed to use more liquid but it’s been very dry here so my flour could well be dry. Anyway, the loaf turned out a treat!

Hi Mr. Paul. I made your soda bread recipe today but found I needed at least 400ml of buttermilk to make everything come together. It made a gorgeous loaf which I’ll serve tonight.

Hi Mr. Paul. I’d like to try this soda bread but I don’t see any oven temperature to bake it at. My instincts tell me that it needs a hot oven because of the bicarbonate of soda/baking soda so I’m guessing about 200C? Many thanks.
