How hot is lukewarm?

Quite a few baking recipes, especially those using yeast call for Lukewarm Milk or Water, well, do you know how hot ‘Lukewarm is’?

As a professional baker we never, ever leave things to chance however experienced we are, everything and I mean everthing is weighed, yes even water and eggs, and lukewarm is something that should not be guessed especially when dealing with yeast as it can so easily be killed if the liquid is too hot.

Lukewarm is when we mix 1 part of room temperature milk or water and add to it 2 parts of boiling milk or water. It’s about 37ºc to 40ºC. Roughly body temperature.
