Hot Cross Buns
You don’t have to limit yourself to these Delicious, mouth watering Hot Cross Buns just at Easter, follow my recipe and you could be eating them all year round. They’re very nice on Boxing Day even.
Hot Cross Buns - Recipe

Ingredients
- 500 g Strong White Bread Flour
- 75 g Sugar
- 2 tsp Mixed Spice
- 1 tsp Cinnamon
- Zest of a large lemon
- ½ tsp Salt
- 10 g Fast acting Yeast
- 40 g Butter or Veg. oil
- 300 g Milk warmed to about 40ºC
- 1 Egg beaten
- 200 g Sultanas/Raisins
- 50 g Mixed Peel Finely Chopped
- A little oil for greasing.
For the Crosses
- 30 g Plain Flour
- 30 g Cold Water
For the Glaze
- Equal parts of Sugar and hot water.
DISCLAIMER
I recommend using the Metric measurements (instead of cups & spoons) for more accuracy and better results.

The prep, time dose not include proving time.
If you don't have a pipping bag, just use any small plastic bag and snip off a tiny bit of the corner after you've filled it.

Yes mixed peel is the candied peel of oranges and lemons. If you can’t find it you can subsigue it with grated zest of the fruits.
Hello Mr. Paul. Is mixed peel the same as candied peel? I can’t buy it in April where I live, so will have to make it myself or figure out a substitute. I have some mixed spice (from your recipe) and everything else I have or can purchase here. Thank you so much for this authentic and clearly explained recipe. I’m excited to try it for Easter.

These are delicious!!! i am in the USA. I used ¼ t coriander, ¼ t caraway, ¼ t nutmeg, ¼ t dry ginger, ¼ t ground cloves, ¼ t mace, ½ t allspice]for the 2t Mixed Spice. I also used 1 1/2 c British candied fruit & peel mix [instead of the dried fruit + candied peel], available in USA around Christmas for making fruit cakes. I did need to bake them 20 mins at 375F instead of 15 mins. My husband and I loved them!!
