Homemade Baked Beans

These Homemade Baked Beans are something I started making some time ago, mainly because the baked beans I had enjoyed for years either on my cooked breakfast or more recently on toast were definitely not what they used to be. The sauce was becoming noticeably more transparent every time I bought them, not to mention the actual flavour which now seemed non existent, well to me it did, I don’t know how you felt about it.

One day I was watching a video by Ina Garten (The Barefoot Contessa) and she was making some Southern type baked beans, which, by the way brought to mind the old Cowboy films of my youth. They always appeared to live on a diet of just baked beans. So, that inspired me to experiment making my own version of this iconic dish and this is the result of many twists and tweaks and I personally think it’s the ultimate in Baked Beans.

Ingredients

  • 1 tbsp oil
  • 150 g bacon streaky or pancetta, chopped
  • 1 medium onion finely chopped
  • 3 cloves garlic minced
  • 3 cans white beans any white beans will do, drained and rinsed (See my tips below)
  • ¾ cup tomato ketchup I use a teacup
  • 1 small tin chopped tomatoes and whizzed in the food processor for a minute or so.
  • 2 tbsp molasses golden syrup or 3 tbsp brown sugar
  • 2 tbsp cider vinegar
  • 185 ml water
  • 2 tsp mustard powder or 2 tbsp Dijon mustard
  • 2 tsp Worcestershire sauce
  • ½ tsp cayenne pepper or chilli powder
  • salt & pepper to taste. It will need at least 1/2 tsp of each.

DISCLAIMER

I recommend using the Metric measurements (instead of cups & spoons) for more accuracy and better results.

Instructions

  • Heat oil over high heat and add the bacon, cook for a couple of minutes.
  • Add onion and garlic. Cook for 3 minutes until onion and bacon are golden, making sure you don’t burn the garlic.
  • Add the remaining ingredients. Stir, bring to simmer, then place lid on.
  • Now you can either cook on the stove top on a very low heat for about an hour, stirring occasionally to avoid it catching on the bottom. Or, alternatively you could put it in a preheated oven set at 160ºC for an hour.
  • If you have a SLOW COOKER and wish to use that: Reduce the water to 60ml transfer to slow cooker and cook for 6 hours on low.
  • The sauce should be nicely thickened, but if not cook a little longer without the lid. Taste and adjust salt and pepper to taste at the end.
Paul's Tips & Tricks
You can use any beans for this recipe, I prefer to use any canned white beans or you can if you wish use red kidney beans. Some people prefer to soak their own dried beans and cook them but I think canned ones are ideal for this dish.
Make this a vegetarian dish by leaving out the bacon

This is the best baked bean recipe! First time I’ve used canned beans, too. I love baked beans on toast, but the picture of that English breakfast would be great as a Canadian dinner. Decisions, decisions! I hope I have some left. I keep sampling them! We’ll done Mr. Paul! Yum! 😋 😊

Hello Mr Paul. I’ve made these beans and they are brilliant. So tasty. I’m going to make them again at the weekend for a friend who’s staying over. So so much better than any tinned ones you can buy. And they really do freeze well. Thanks for posting. As ever take care and stay safe
