Ingredients
For the grilled chicken
- 1 tablespoon Olive Oil
- 6 Chicken Thighs skinless and boneless
- 80 ml Mango Coriander Dressing
- for the salad
- Enough Lettuce for 6 people roughly chopped. I personally like Romaine (Cos)
- 2 medium Cucumbers diced
- 1 medium Red Pepper sliced thinly
- 1 Avocado ripe and sliced or cubed
- Small handful Coriander roughly chopped
- 80 ml Mango Coriander Salad Dressing
For the Dressing
- 1 teacup diced ripe Mangoes
- Small bunch of Coriander leaves
- 1 Thai Red Chilli
- 3 cloves Garlic chiopped
- 2 tablespoons Red Wine Vinegar
- ¾ teaspoon Salt
- 80 ml Olive Oil Extra Virgin
DISCLAIMER
I recommend using the Metric measurements (instead of cups & spoons) for more accuracy and better results.
Instructions
- First you'll need to make the dressing, because the chicken needs to marinate in about 80ml of it for 15 - 20 minutes.
- MAKING THE DRESSING
- In a Blender or food processor place the mangoes, coriander, red chilli, garlic, red wine vinegar and sal. Start blending and once the ingredients are breaking down, slowly pour in olive oil till the dressing emulsifies and becomes creamy almost like a mayonnaise.
- GRILLING THE CHICKEN
- Once you've done that, add some olive oil to a grill pan or a baking sheet and cook the chicken for 20 - 30 minutes, turning halfway. Make sure the chicken is thoroughly cooked. Now let it rest for 5-10 minutes before slicing it.
- ASSEMBLING THE SALAD
- Assemble the salad as near to serving time as possible. A add lettuce, cucumbers, red pepper, avocado, coriander and the sliced grilled chicken to a large bowl. Pour the dressing on top and toss to combine when at the table. Serve immediately or the salad will get soggy.
