Although we always called these ‘Yorkshire’ Teacakes in the bakery, they are popular in most areas of England, a teacake is a light, sweet, yeast-based bun containing dried fruits, most usually currants, sultanas or peel. It is typically split, toasted, very well buttered, and served with nice cup of tea. This video will show you every step in making this traditional English afternoon treat.

Ingredients

  • 550 g Bread Flour
  • 285 g Milk Warm
  • 1 Egg Large
  • 40 g Oil NOT Olive Oil
  • 60 g Sugar
  • 7 g Yeast Fast Action, If using fresh 25g
  • 150 g Dried Fruit
  • Zest of One Lemon
  • ½ teaspoon Salt
  • 6 g Mixed Spice or Allspice or see note below

DISCLAIMER

I recommend using the Metric measurements (instead of cups & spoons) for more accuracy and better results.

If you can't find ready to use Mixed Spice, make your own: 2 teaspoons ground cinnamon 2 teaspoons ground nutmeg 2 teaspoons ground allspice ⅔ teaspoon ground cloves ⅔ teaspoon ground ginger ⅔ teaspoon ground coriander 1 ½ teaspoon ground mace
