English Butterfly Buns

English Butterfly Buns have been a staple of Children’s birthday and Christmas parties in the UK for many years. they’re also a great standby for any party table for all ages. They’re simple to make even at the last minute.

English Butterfly Buns

A real blast from the past, lots of you will remember these from children's parties

Ingredients

  • 100 g margarine soft
  • 100 g sugar caster
  • 2 large eggs See my note below
  • 100 g self-raising flour if using plain flour see notes below
  • 1 tsp baking powder

For the icing:

  • 175 g Margarine soft
  • 350 g icing sugar plus extra for dusting

DISCLAIMER

I recommend using the Metric measurements (instead of cups & spoons) for more accuracy and better results.

Instructions

  • Preheat the oven to 180ºC/gas 6.
  • Place the bun papers into a 12-hole bun tin,
  • Cream the margarine and sugar together until light and fluffy Add the eggs one at a time mixing well in between.. Now add the flour and baking powder and mix until smooth.
  • Fill each paper case with the mixture.
  • Bake for 15–20 minutes or until the cakes are golden brown. Lift the paper cases out of the bun tin and cool the cakes on a wire rack.
  • To make the icing, beat the margarine or butter and icing sugar together until well blended.
  • Cut a slice from the top of each cake and cut this slice in half. Pipe a swirl of butter cream into the centre of each cake and place the half slices of cake on top to resemble butterfly wings.
  • Dust the cakes with icing sugar to finish.
NOTE:
If using Plain Flour you will need to add an extra teaspoon of baking powder.
