Easy Madeira Cake – Recipe

Madeira cake is a classic British recipe and, despite it’s name it does not contain any Madeira wine. Enjoy this ldelicious cake any time of day. It’s just as good with a cup of tea.

Easy Madeira Cake

Ingredients

  • 125 g Butter
  • 125 g Sugar
  • 3 Eggs Medium, see my chart below
  • 200 g Self-raising flour if using plain flour add 2 level teaspoons of baking powder see my note below.
  • 1 tblsp Milk only if batter is a little stiff.
  • .A few thin slices of lemon peel Optional

NOTE: All ingredients should be at a warm room temperature

    DISCLAIMER

    I recommend using the Metric measurements (instead of cups & spoons) for more accuracy and better results.

    Instructions

    • Cream butter and sugar well until it's pale, light and fluffy.
    • Gradually beat in the lightly whisked eggs, I add them in three lots with a spoonful of the flour, mix until incorporated before adding the next lot.
    • Then FOLD in the remaining flour, do not beat.
    • Grease a 18 cm cake tin, cut a disc of parchment for the base then add your cake batter.
    • Bake in centre of oven at 180°c, Gas Mark 4 for approx. 35 - 40 minutes, test with a skewer
    • After 25 minutes place the lemon peel on top.
    The first thing to know is Baking Powder is NOT baking Soda or Bicarb of soda.
    When I mention teaspoons or tablespoons I mean a Measuring spoon NOT one from your cutlery drawer as they are all different shapes and sizes.
    Suggestion This cake very nice spilt and filled with Strawberry Jam and if you feel like pushing the boat out some either buttercream or fresh whipped cream.

    Mr. Paul’s Tips: I suggest you check the cake after 30 mins as all ovens differ and I have yet to find one that heats to the exact temperature you have set it at, even new ovens. Treat yourself to an Oven-Thermometer if your serious about baking.

    This is the kind of Spring Form cake tin I Use except mine is much older and NOT non-stick
