Coffee Kisses

These Coffee Kisses are light as a feather and so delicious I challenge anyone who doesn’t hate coffee to eat only one of them. Super for parties, afternoon tea and anytime in between breakfast and supper.

Ingredients

  • 150 g self-raising flour
  • 75 g sugar caster
  • 75 g butter
  • 1 egg beaten
  • 2 tsp instant coffee dissolved in 1 tbsp hot water

For the Coffee Butter Cream

  • 50 g butter softened
  • 100 g icing sugar
  • 2 tsp coffee essence if you don’t have this, mix 2 tsp instant coffee with 1 tsp water. Or you can use a tsp cocoa powder in with the icing sugar.

DISCLAIMER

I recommend using the Metric measurements (instead of cups & spoons) for more accuracy and better results.

Instructions

  • Preheat you oven to 180ºC/160ºC Fan/Gas 4
  • Mix flour and sugar in a mixing bowl, rub in the butter with finger tips.
  • Stir in the egg and coffee and mix well with a spatula or wooden spoon
  • Divide the resulting dough into balls about the size of a cherry, I know that sound small, but trust me.
  • Place the balls on a baking sheet, either greased or on baking parchment and bake for about 15 minutes
  • When cold, sandwich in pairs with the butter cream as photo above.
