Banana Tea Bread
This is one of many different Banana Tea Bread recipes that have evolved over the years. Mine is a simple basic recipe we used in the shop for years. There was a time when I decide to upgrade a few of our old recipes and this was one of them. I spiced it up a little with cinnamon and nutmeg: Bad move, the sales plummeted within two or three weeks to almost zero. So, lesson learned, as the old saying goes “If it ain’t broken, Don’t fix it”.

Ingredients
- 200 g flour self-raising
- ¼ tsp bicarbonate of soda
- ½ tsp salt
- 75 g butter
- 175 g sugar caster
- 2 eggs beaten
- 450 g bananas ripe mashed
- 100 g walnuts chopped
DISCLAIMER
I recommend using the Metric measurements (instead of cups & spoons) for more accuracy and better results.
Instructions
- Mix the flour, bicarbonate of soda and salt together
- Cream the butter and sugar until pale and fluffy, add eggs a little at a time alternately with the flour mixture.
- Stir in the remaining flour, the mashed banana and walnuts.
- Place in a well greased loaf tin (20.5cm x 12.5cm).
- Bake for 1.1/4 hours at 180ºC/160ºC Fan/Gas 4, check with a skewer or knitting needle, if it comes out clean the cake is done.
- Cook on a wire rack, when totally cold, wrap in foil and keep for 24 hours before eating (if you can wait!)
