Ingredients

  • 200 g flour self-raising
  • ¼ tsp bicarbonate of soda
  • ½ tsp salt
  • 75 g butter
  • 175 g sugar caster
  • 2 eggs beaten
  • 450 g bananas ripe mashed
  • 100 g walnuts chopped

DISCLAIMER

I recommend using the Metric measurements (instead of cups & spoons) for more accuracy and better results.

Instructions

  • Mix the flour, bicarbonate of soda and salt together
  • Cream the butter and sugar until pale and fluffy, add eggs a little at a time alternately with the flour mixture.
  • Stir in the remaining flour, the mashed banana and walnuts.
  • Place in a well greased loaf tin (20.5cm x 12.5cm).
  • Bake for 1.1/4 hours at 180ºC/160ºC Fan/Gas 4, check with a skewer or knitting needle, if it comes out clean the cake is done.
  • Cook on a wire rack, when totally cold, wrap in foil and keep for 24 hours before eating (if you can wait!)
