Ingredients
- 300 g prawns cooked, peeled , patted dry
- 120 g lettuce of your choice, washed and patted dry
- 1 cucumber cut into thin ribbons, I use a veg. Peeler for this.
- 2 avocados sliced
- 6 cherry tomatoes halved
- 50 g cashew nuts toasted and roughly chopped
For the dressing
- 1 red chilli finely chopped, optional (deseeded if you like)
- 1 lime zested and juiced
- 1 ½ tbsp sesame oil
- 1 ½ tbsp soy sauce
DISCLAIMER
I recommend using the Metric measurements (instead of cups & spoons) for more accuracy and better results.
Instructions
- Mix all the dressing ingredients together in a large bowl with some black pepper to your taste and add the prawns and leave them to marinate for 15 mins.
- Remove the prawns and transfer to a plate, now add the lettuce, avocado and the cucumber into the remaining dressing and carefully toss to combine.
- Divide the salad between plates, and top with the prawns and cashews.
