Avocado, Cucumber & Prawn Salad

A simple prawn salad to make the most of Slices of chunky avocado, cucumber makes a great mix of textures and flavours. A salad to delight your friends and family.

Ingredients

  • 300 g prawns cooked, peeled , patted dry
  • 120 g lettuce of your choice, washed and patted dry
  • 1 cucumber cut into thin ribbons, I use a veg. Peeler for this.
  • 2 avocados sliced
  • 6 cherry tomatoes halved
  • 50 g cashew nuts toasted and roughly chopped

For the dressing

  • 1 red chilli finely chopped, optional (deseeded if you like)
  • 1 lime zested and juiced
  • 1 ½ tbsp sesame oil
  • 1 ½ tbsp soy sauce

DISCLAIMER

I recommend using the Metric measurements (instead of cups & spoons) for more accuracy and better results.

Instructions

  • Mix all the dressing ingredients together in a large bowl with some black pepper to your taste and add the prawns and leave them to marinate for 15 mins.
  • Remove the prawns and transfer to a plate, now add the lettuce, avocado and the cucumber into the remaining dressing and carefully toss to combine.
  • Divide the salad between plates, and top with the prawns and cashews.
