1cucumbercut into thin ribbons, I use a veg. Peeler for this.
2avocadossliced
6cherry tomatoeshalved
50gcashew nutstoasted and roughly chopped
For the dressing
1red chillifinely chopped, optional (deseeded if you like)
1limezested and juiced
1 ½tbspsesame oil
1 ½tbspsoy sauce
DISCLAIMER
I recommend using the Metric measurements (instead of cups & spoons) for more accuracy and better results.
Instructions
Mix all the dressing ingredients together in a large bowl with some black pepper to your taste and add the prawns and leave them to marinate for 15 mins.
Remove the prawns and transfer to a plate, now add the lettuce, avocado and the cucumber into the remaining dressing and carefully toss to combine.
Divide the salad between plates, and top with the prawns and cashews.
