Watermelon, Cucumber & Feta Salad
Living in Spain has a lot of advantages, especially in the summer months. The shops are overflowing with whatever is in season at that moment, unlike the UK. Where you can buy anything and everything whatever the season because it’s all imported all the year round, that’s OK, except it’s NOT fresh.
As I sit writing this, the greengrocers and supermarkets are full of fresh Watermelons, juicy and sweet, also lovely fresh Cucumbers, these two items are the most refreshing combinations I can think of. Once you add a few other items such as onions, mint and a nice salty feta cheese. All it needs then is a dressing of olive oil and red wine vinegar and have Summer on a plate.
This is the perfect summer salad to accompany a nice steak, grilled or bbq Chicken, even a simple burger will be taken to the next level.

Ingredients
- 60 mls olive oil extra virgin
- 2 tbsp red wine vinegar
- ½ tsp. salt
- 450 g cubed seedless watermelon
- 120 g cucumber cubed
- 1 50 g crumbled feta
- 26 g red onion thinly sliced
- 12 g. coarsely chopped mint
- Flaky sea salt for garnish (optional)
DISCLAIMER
I recommend using the Metric measurements (instead of cups & spoons) for more accuracy and better results.
Instructions
- In a small bowl, whisk together the olive oil, red wine vinegar, and salt.
- Then in a large serving bowl, combine the cubed watermelon, cubed cucumber, crumbled feta, thinly sliced red onion, and chopped mint. Pour over dressing, tossing to combine.
- Garnish with more mint and flaky sea salt.
