Singing Hinnies

Singing Hinnies are a regional recipe from Newcastle in the North of England. They’re very much like Welsh Cakes but traditionally don’t have any added sugar, juts getting their sweetness from the dried fruit. However, I much prefer to add some sugar, it makes all the difference.

Singing Hinnies

Ingredients

  • 300 g Plain Flour
  • 1 tsp Baking Powder NOT Baking Soda
  • ½ tsp Salt
  • 75 g Lard or any white shortening
  • 75 g Butter Cold
  • 100 g Currants or any dried fruits)
  • Although the recipe does not have any sugar in it I personally prefer to add 25g White Sugar

DISCLAIMER

I recommend using the Metric measurements (instead of cups & spoons) for more accuracy and better results.

Mr. Paul's Tips
As I mentioned above, I prefer to add 25g white sugar to this recipe. I also tried soaking the dried fruit overnight in some cold tea to plump them up and this made them much better.
